Unfortunately I'm a heinous "tweeker" of my roster, adding or taking away an inch to their height or messing with their age on a whim. But I've settled down from that now and wouldn't mind aging them appropriately. But if you age your characters, and other people keep theirs frozen...things get kind of muddled.
As for birthdays, I considered the days I uploaded their roster page to be their birthday. Fairly appropriate, plus that's simpler than looking up matching zodiac signs >_>

People SHOULD be aging their characters though, IMO. But yeah, if you want your characters to have consistent ongoing story lines that involve recalling events long passed then your gonna havta age those suckers. Good luck convincing characters like Cecilia and Natalia to start turning 30 though...

The thing is, with as long as matches and storyline events take to complete sometimes, I don't think you can age characters on a realistic scale (ie. One year for every year since their upload date). I mean it doesn't take weeks/months for them to complete a match. So I generally age my characters on a slower scale. Like a year for every two or three....

AFW's timeline does not *officially* run parallel with our own (despite our "annual" PPVs)
I'm not saying its bad to update your characters age year by year if thats what you want to do, but I am certain not keen on the idea. I always saw it as causing numerous anomalies due to RPs and matches taking months to complete depending how often a member posts or how many character they have to juggle. As a result a rivalry that RP wise lasted a month can last a year in real time.
Apart from that, all my most active characters get about 2 or 3 matches a year (what on earth were they doing for the rest of the year?!)... They would also all be close to (if not in) their thirties by now (which, yes its ok to have 30 year old wrestlers... but 30 year old kawaii O_o )... all my kawaii characters would have matured to the normal roster and subsequently been retired because they are no longer fulfilling the purpose I created them for (The likes of Lil Luci, Erin and Dani would be approximately 26-28? Instead of carrying them on I would be more likely to replace them every couple of years with Luci, Erin and Dani mark 2). Then there's the year long title reigns with only 1 or 2 title defenses *Cough* Brock Lesnar styley *cough*
I do increase my characters' age, but only rarely as and when I see fit. Usually when they haven't been used for a while and I revamp their bios (justifying the age skip)... I consider if I feel that they have (and if I want them to have) grown older. Usually with kawaii's this will not be the case unless I wanted to drastically change their direction.

The annual ppv's are to me a pretty big case for aging a character, but for me, I wanted to play the full run of my characters. I age the main ones in real time, Taylor and Cassie, Allison isn't quite real time, and the lesser used ones have sort of stayed the same because I don't want them to grow out of AFW before I have even written them.
I wanted to have Taylor and Cassie start as fresh young rookies, Taylor was 20 and Cassie was 18, but I didn't want to play a 20 year old and an 18 year old forever. I want them to grow and progress, so their getting older is more because of that than it is to keep up with the progression of time in the setting.
Edit: As for the characters having fewer matches in a year, like Kel's 3/year, that's more in line with actual professional fighters.
And as long as we have dozens of people doing their own thing, you're never going to have agreement with all the timelines. You just do your best to fit them where you can, and not draw attention where you can't.
